My Vegan Journey so Far

I started my vegan journey back in late 2017 for the first time of many before it finally stuck. Immersed myself with cookbooks, blogs and famous vegan Youtuber's and spent hours upon hours googling the best possible way to do it, and I can HONESTLY say it was the biggest waste of time as I quit two weeks in...
This was the first attempt out of three before my new lifestyle stuck!
Originally I was obsessed with becoming the best possible version of myself almost overnight and was convinced it would take a few weeks to see the health results and lifestyle changes by only changing my diet slightly... this was not the case and I filed my fridge and freezer with meat substitutes, vegan cheeses and all sorts fast and easy to grab foods with only a small section of veg... this was my first mistake.
I neglected all sources of natural proteins and nutrition and found myself gaining more weight than ever and not feeling very healthy at all.
I have struggled with my weight since I was a teenager and struggled with food throughout my teens and my early twenties leading me to develop an eating disorder from a young age which ultimately halted my love of food. I wish I had known I could eat small amount of protein, veggies and feel amazing and this is something I want to talk about in future blog posts.
A few months later I decided to cut the meat out and become vegetarian and limit my diary due to already having a lactose intolerance and this was the halfway step I needed for the rest of 2018.
January 2019 came along and I decided I was 100% going to go vegan and stick to it but this time I went into it with the mind frame that I was also going to learn to cook without the use of junk food and this was the final mountain to climb in my journey to becoming vegan.
I am now fully 100% vegan and use mainly organic fruits and vegetables every day with the occasional vegan sausage and I feel healthier than ever, I am feeling mentally fitter and have more energy to do all the thing I have always wanted to do!
It hasn't been an easy journey and I had to have a good few attempts before taking the dive but I realised to have the lifestyle I wanted I would have to do what was best for me and not copying a Youtuber's lifestyle vlog.
I decided not only body needed to be fit and healthy but also my mind and have taken to doing daily meditation and daily yoga practice, this has been a challenge as I am 100% a Netflix lover but once I got into it I felt great and enjoy taking timeout from my busy lifestyle.
I have lost a stone in a month and have finally got my butt to the gym and I can finally look at my lifestyle and be proud of how far I have come.
A lot has been happening in the UK and in the world about climate change and our plastic use and it got me thinking a few months ago what I could to do to reduce my waste and I started to look for local markets (I live in the most expensive university city in the UK) and found that going to my local weekly market cut down my waste and outgoings by almost 85%.
I picked up a huge range of organic foods for significantly cheaper than my local supermarket and instead of spending £30-40 a week on non-organic foods (for two people) I was spending £18-25 for fresh organic fruit and vegetables and cutting down to almost zero-waste with ease by just going to my local market!
This is such a small and easy change which has not just benefited my health but also my pocket - So I would highly recommend shopping locally and supporting the markets as you can find some beautiful fruits and vegetables on your doorstep.
So... thats my journey so far, I am living a healthier lifestyle and learning to cook some amazing dishes I cannot wait to share with you.
