Sausage & Rosemary Potatoes Casserole

Since starting my vegan journey I haven't really missed any meat as I was never really was a big meat eater, however I am fond of comfort food and a warming meal so I have been experimenting with various flavours for casseroles and this has been my favourite dish so far!
It a really simple dish with a prep time of under 15 minutes, its a great meal to just pop in the oven and leave whilst getting on with other tasks.
(serving for 2/3 people)
2-4 vegan sausages (homemade, packaged or frozen) - I like to use Linda McCartney's.
4-5 potatoes
1 sweet potatoes (optional)
1 diced onion
Half a cauliflower
2 segments of garlic
1/2 a courgette
2 beef tomatoes (diced)
2 tablespoons of olive oil, mixed with garlic salt, chilli and pepper
2 cuttings of fresh rosemary
(1) Cut all the vegetables (minus the rosemary) into chunky bits and cover with the tablespoons of your olive oil with seasoning.
(2) Roast all of the vegetables without the sausages until the potatoes are soft (can take up to 25-30 minutes depending on your oven) I like to cover the dish with foil to keep it moist.
(3) Take the vegetables out of the oven and place on the side to add sausages to the casserole.
(4) Boil a mug hot water and add two tablespoons of your favourite vegetable gravy (I like the Bisto vegetable gravy as it gives it a thick gravy filling) and pour this over your vegetables and sausages, add your rosemary and cook for a further 20-25 minutes and enjoy!
This is a great dish if you have lots to do in an evening or your looking for a dish your non-vegan friends and families will love!
Easy to make with only a few ingredients.
