I'm not sure if I am the only vegan who does this but I tend to buy a lot of banana's and tend not to end up eating them all - I am very guilty of forgetting I have them or just not eating them before they go bad.... and I have been looking to reduce my waste as of late and I found this yummy solution!

This is a simple banana bread recipe and I was surprised at how easy it was to make as I am not an experienced baker at all!

You will need:

4/5 Banana's

1/4 cup of vegetable or sunflower oil

1/4 cup of plant based milk (I used almond)

1/2 cup of sugar (can be white or brown)

2 tsp of vanilla extract

1 tsp on cinnamon

A pinch of salt

Sliced bananas for topping

(1) Preheat the oven to 160/170 °C

(2) Line your loaf tin with baking paper.

(3) Roughly mash the bananas then add the sugar, salt, cinnamon, oil , vanilla extract and plant based milk.

(4) Slowly mix in the flour and mix till there is no lumps!

(5) Put the mixture in the loaf tray evenly.

(6) Add bananas for topping (optional)

(7) Bake for 30-40 minutes (depending on your oven)

(8) Check on your loaf then add tin foil for 10-15 minutes until cooked all the way through!

(9) Leave to cool for 5-10 minutes then ENJOY :)

Lots of ingredients can be altered to your tastes in this loaf and thats why its one of my favourite here are some alternatives.

- Oat milk for a creamier texture and taste.

- Vanilla almond milk for an extra vanilla taste.

- Cacao powder to make a chocolate and banana cake!

-If you don't like bananas both plums and peaches make a very nice loaf just make sure they are very ripe!
